Tamarind is the pulpy fruit that comes from the bean-like pods of the tamarind tree, which is native to eastern Africa. It usually comes in a block of crushed pulp or as a concentrated paste. It tastes sour, sweet and fruity, and it is used to give sourness or tartness to dishes. Tamarind is used in many Indian curries, chutneys and pickles and in Chinese hot and sour soup. In the west, it's an essential ingredient in Worcestershire sauce. As it ripens, tamarind loses its tartness and becomes much sweeter - at this stage it is used in a variety of candies, beverages and sweets.
