Lemon thyme is a lesser-known cousin to common thyme, and it has much the same basic flavour, with a bright, lemony overtone that really perks food up. Its appearance is leafier and brighter green, with tiny grey-purple flower buds. Try it in place of regular thyme in any dish where you want a citrusy flavour to complement the mellow spiciness of thyme.
