Chives are the smallest and lightest flavoured of the onion family. Great in soups, perfect in scrambled eggs and omelettes, and totally essential to baked potatoes, chives are possibly the easiest thing to grow in a Canadian garden. However, in the middle of winter, dried chives make a passable substitute if you soften them in warm water for a few moments.
