Chinese cassia, known as “tung hing” in China, is closely related to Vietnamese cinnamon, but has less volatile oil and an intensity somewhere between our Indonesian and Vietnamese cinnamons. It has its own distinct flavour, though, with a woody sweetness and a nice moderate spiciness. Chinese cassia has historically been known as “fake cinnamon” but those days are over and now all the different cassias have a rightful place in the spice world. Many people feel that Chinese cassia is the perfect all-purpose baking cinnamon. Not too mild, not too strong.
